Tropical Kale Salad

This Tropical Kale Salad is a vibrant and nutritious combination of fresh kale, sweet pineapple, juicy mango, and crunchy macadamia nuts. The zesty dressing adds a burst of flavor to this tropical delight.

Ingredients:

  • 4 cups of kale, stems removed and chopped
  • 1 cup of fresh pineapple chunks
  • 1/2 cup of diced mango
  • 1/4 cup of red onion, thinly sliced
  • 1/4 cup of toasted coconut flakes
  • 1/4 cup of chopped macadamia nuts
  • 1/4 cup of feta cheese, crumbled
  • Dressing: 1/4 cup of olive oil
  • 2 tablespoons of fresh lime juice

Instructions:

Put the chopped kale and a pinch of salt in a large bowl

Put the diced mango, sliced red onion, chunks of pineapple, and toasted coconut flakes in the bowl with the kale

Whisk the honey, Dijon mustard, salt, and pepper into the olive oil in a separate small bowl

This will make the dressing

Pour the dressing over the salad, then toss everything together to mix

Add the feta cheese crumbles and chopped macadamia nuts to the salad

Once more, toss to make sure the toppings are spread out evenly
