Ingredients:
- 4 cups diced potatoes
- 6 strips of bacon, cooked and crumbled
- 1/2 cup blue cheese crumbles
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup mayonnaise
- 2 tablespoons sour cream
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions:
Boil the diced potatoes in salted water until fork-tender, about 10-12 minutes
Drain and let cool
In a large bowl, combine the cooked and crumbled bacon, blue cheese crumbles, diced red onion, and chopped fresh parsley
In a separate small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, and apple cider vinegar until well combined
Season with salt and pepper to taste
Add the cooled diced potatoes to the bowl with the bacon and blue cheese mixture
Pour the dressing over the potato mixture and gently toss to coat everything evenly
Chill the potato salad in the refrigerator for at least 30 minutes before serving
Garnish with additional parsley and blue cheese crumbles, if desired
