On a cool fall day, this Creamy Pumpkin Chili in the Crockpot is the best thing to warm you up. Its a hearty and satisfying meal that will warm you up from the inside out thanks to the pumpkin puree, spices, and creamy middle.
Ingredients:
- 1 lb ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can 15 oz pumpkin puree
- 1 can 15 oz white beans, drained and rinsed
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz diced tomatoes
- 1 cup chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 1/2 cup heavy cream
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions:
Ground turkey, onion, and garlic should be cooked in a skillet until the turkey is browned and the onion is soft
Move the turkey mixture that has been cooked to a slow cooker
In a slow cooker, put in diced tomatoes, chili powder, cumin, cinnamon, salt, and pepper
Also add pumpkin puree and black beans
Use a stir to mix
Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours
Before serving, add the heavy cream and mix it in well
Serve hot with extras if you want
