Ingredients:
- 1 cup cooked quinoa
- 1 can white beans, drained and rinsed
- 1 medium zucchini, grated and excess moisture squeezed out
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 tablespoon nutritional yeast
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup cherry tomatoes
- 1 tablespoon balsamic vinegar
- Fresh basil leaves for garnish
Instructions:
In a large bowl, mash the white beans until mostly smooth
Add cooked quinoa, grated zucchini, parsley, minced garlic, nutritional yeast, lemon juice, salt, and pepper
Mix well to combine
Form the mixture into small patties
Heat olive oil in a non-stick skillet over medium heat
Add the patties and cook until golden brown on both sides, about 4-5 minutes per side
In another skillet, heat cherry tomatoes over medium heat until they start to burst, about 5-7 minutes
Drizzle balsamic vinegar over the burst cherry tomatoes and gently stir to combine
Serve the quinoa white bean zucchini fritters topped with burst cherry tomatoes and garnish with fresh basil leaves
