Vegan Veggie Burgers with Coleslaw

Because they are made with black beans, quinoa, and fragrant spices, these vegan veggie burgers are high in protein and taste great. With a crunchy and creamy coleslaw, they make a healthy and filling meal for both vegans and non-vegans.

Ingredients:

  • 2 cups cooked black beans, mashed
  • 1 cup cooked quinoa
  • 1 cup grated carrots
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 tablespoon ground flaxseed mixed with 3 tablespoons water
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup vegan mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • Salt and pepper to taste
  • 4 whole wheat burger buns

Instructions:

Put cooked quinoa, grated carrots, chopped onion, parsley, minced garlic, cumin, paprika, salt, and black pepper in a large bowl

Mix the ingredients together

Mix everything together well

Put the four patties on a baking sheet that has been lined with foil

Put in the fridge for 30 minutes to get firm

Before you start cooking, heat the oven to 375F 190C

The veggie burger patties should be baked for 20 to 25 minutes, flipping them over once, until they are firm and golden brown

Start making the coleslaw by putting together shredded carrots and cabbage, vegan mayonnaise, apple cider vinegar, maple syrup, salt, and pepper in a bowl

Mix well

Let the whole wheat burger buns get a little toasty in the oven

Put the burgers together by putting the cooked patties on the toasted buns and then adding a lot of coleslaw on top

Serve right away and enjoy
