Triple Chocolate Zucchini Cookies

Indulge in the rich and moist goodness of triple chocolate zucchini cookies. The addition of grated zucchini adds a hint of nutrition and keeps the cookies soft. Perfect for chocolate lovers and a sneaky way to enjoy some veggies

Ingredients:

  • 1 cup grated zucchini, drained
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup dark chocolate chips

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy

Beat in the egg and vanilla extract until well combined

Stir in the grated zucchini

In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Fold in the semisweet, white, and dark chocolate chips

Using a cookie scoop or spoon, drop spoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie

Bake in the preheated oven for 10-12 minutes, or until the cookies are set around the edges

Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
