Shrimp Poboy Salad

A delicious twist on the classic Poboy sandwich, this salad features crispy fried shrimp served on a bed of mixed greens with all the traditional Poboy fixings. The tangy dressing adds a spicy kick to this refreshing salad.

Ingredients:

  • 1 pound of large shrimp, peeled and deveined
  • 1 cup of buttermilk
  • 1 cup of cornmeal
  • 1/2 cup of all-purpose flour
  • 1 teaspoon of paprika
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste
  • 4 cups of mixed greens
  • 1 tomato, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup of sliced pickles
  • 1/4 cup of mayonnaise
  • 2 tablespoons of hot sauce
  • 2 tablespoons of lemon juice
  • 1 tablespoon of olive oil

Instructions:

Mix buttermilk and shrimp in a bowl

Soak them for 15 minutes

Mix the flour, paprika, garlic powder, salt, and pepper in a different bowl

Take the shrimp out of the buttermilk and coat them in the cornmeal mix

In a pan, heat the olive oil over medium-high heat

Fry the shrimp in batches for about two to three minutes on each side, or until they are golden brown and crispy

Take it off and let it dry on paper towels

Put mayonnaise, hot sauce, and lemon juice in a small bowl and mix them together with a whisk

Put the mixed greens on plates to serve

Put pickles, diced tomato, and sliced red onion on top of the greens

Add the crispy shrimp to the salad

Dress the salad with the dressing or put it on the side
