Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1/2 cup semi-sweet chocolate chips optional
- 1/2 cup rainbow sprinkles optional
Instructions:
Warm your oven up to 350 F 175C and put paper liners in a cupcake tin
Put the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl
In a separate bowl, mix the eggs, buttermilk, oil, and vanilla extract
Mix the batter well and until it is smooth
Carefully pour the boiling water into the mixture and stir it in until its well mixed
Its okay that the batter isnt very thick
You can add chocolate chips and rainbow sprinkles for extra flavor and texture if you want to
Fill up about two thirds of the way to the top of each cupcake liner with the batter
Bake in an oven that has already been heated for 18 to 20 minutes, or until a toothpick stuck in the middle of a cupcake comes out clean
After taking the cupcakes out of the oven, let them cool for 5 minutes in the pan
Then, move them to a wire rack to cool all the way down
They can be eaten plain or topped with your favorite frosting once they are cool
