Brown Butter Oatmeal Cookies with Caramel and Peanut Butter

Indulge in the rich flavors of brown butter, the chewiness of oats, and the sweetness of caramel, all complemented by the nutty goodness of peanut butter. These cookies are a perfect blend of comfort and indulgence.

Ingredients:

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups old-fashioned oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup caramel bits
  • 1/2 cup creamy peanut butter

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a saucepan, melt the butter over medium heat

Continue cooking, swirling occasionally, until the butter turns golden brown and gives off a nutty aroma

Remove from heat and let cool slightly

In a large mixing bowl, combine the browned butter, brown sugar, and granulated sugar

Mix until well combined

Add the eggs and vanilla extract to the butter-sugar mixture

Beat until the mixture is smooth and creamy

In a separate bowl, whisk together the oats, all-purpose flour, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Fold in the caramel bits and peanut butter, ensuring even distribution throughout the dough

Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart

Bake in the preheated oven for 10-12 minutes, or until the edges are golden but the centers are still slightly soft

Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely
